Mixed mushroom risotto

This mixed mushroom risotto is a great anytime meal for cyclists and is also quick and easy to prepare.

Here is what you’ll need:

- Spray olive oil
- 1 leek, halved lengthways and sliced
- 500g mixed mushrooms, sliced (e.g. button, swiss, shitake)
- 2 cups rice
- 1 ½ litres vegetable stock
- 100g enoki mushrooms
- ¼ cup grated fresh parmesan cheese
- 2 spring onions, thinly sliced
- 1 tbsp chopped chives
- 1 cup chopped broccoli
