This simple Moroccan inspired dish delivers a good amount of protein to help with recovery post ride with the warming spices creating some nice flavours.

Here is what you’ll need:
- Spray olive oil
- 500g lean beef mince (5% fat)
- 1 large onion, chopped
- 1 pepper, chopped
- Half a small broccoli
- 2 tsp turmeric
- 1 tsp cinnamon
- 1 tbsp cumin
- 100g dried apricot, chopped
- 350ml vegetable stock
- Salt and pepper to taste
