Here is what you’ll need:

For the burgers:

- 500g turkey mince
- 2 tbsp thai curry paste
- 1 egg
- Olive oil

Roasted veg:
- Peppers
- Red onion
- Courgette
- Butternut squash

For the salad:
- Wild rocket
- Pomegranate seeds
- Feta cheese
- Balsamic vinegar
- Salt and pepper
